Are seed oils actually trying to kill me?

The vibe

You’ve seen the TikToks. Beef tallow good, canola oil bad, your inflammation is the sunflower’s fault. The truth is more boring: seed oils are mostly fine, but the foods they live inside are mostly not.

The actual chemistry

Seed oils are high in linoleic acid, an omega-6 fat. Modern diets skew omega-6 high vs. omega-3, which can nudge inflammation pathways. ‘Nudge,’ not ‘ignite.’ Whole foods cooked in seed oil still beat ultra-processed snacks fried in any fat.

What the studies say

Meta-analyses on linoleic acid and heart disease keep finding either a small benefit or no effect. The hot takes ride on cherry-picked rat studies and one 1960s trial that’s been re-analyzed to death.

So what do I do

Cook with whatever you want. The action that actually changes your health is less ultra-processed food, more plants, sleep more than five hours. Seed oils are downstream of that, not upstream.
